Here at beans! cooks! HQ (i.e. our rental suite), we live for a mix of healthy go-to meals and mouth-watering, holy shit I waited all week to make this kinda eats. Salads are cool and all, but like, have you TRIED making your own deep dish pizza!?

ROTW
It’s that DPP, baybee - the one, the only
Dr. Oetker get the heck outta town. This is that real, real shniz. It’s pizza, in a pan.
Ingredients:
Bread flour
Instant Yeast
Salt
EVOO
Red onion
Veggie sausage
Garlics
Oregano
Chili flakes
Crushed tomatoes
Onion + Garlic powders
Sugar
How to make:
Book off your afternoon (it’s worth it.)
Combine the flour, yeast, and salt until homogenous with only lil’ clumps.
Rest 10 mins and knead some more. Make a boule and cover. Rest warm temp for 2h*
Oil your pan, and stretch the dough past the sides (you’ll see why). Rest for 30 mins before stretch no. 2. Cover after each stretch.
Cook minced garlic and onion in a saucepan. When looking and smelling good, add the rest of the sauce stuff - oregano, chili flakes, tomatos, onion + garlic powders, and sugar. Yes, the sugar. You’re gona want this sweet. Cook and reduce for a while - get it thick and tasty!
Preheat the oven to the max. Our oven only does 500F and it’s close enough!
Fry up some sausage while you make the sauce - there probably isn’t enough cook time to throw it on the pizza uncooked. Cook as much as you like. While this is happening, slice some really thin red onion.
When the dough has rested for a little bit and is looking springy, TOP THAT DPP!! Bottom to top → oil in pan, dough, sausage, onions, cheese, and three stripes of sauce. Refer to the Serious Eats recipe here - Kenji is one sweet thang!
When the oven is hot, throw the pizza in!! 12-15 mins, turn it halfway through if your oven is from the early 2000s like ours.
Take it out, rest the pizza 5 mins while you pop that Bubly, and pretend like you won’t eat the whole thing. Oh, the sick lies we tell ourselves.
Easy trick: turn on your oven for 30-40 seconds and then off right away. Put your covered dough (probably in a bowl, I hope) into the oven for that WT rest! Repeat every hour ish.
