Welcome to Meeks’ Eats’ numba 2! This is another favourite of mine - a recipe that I’ll make every few weeks out of pure gluttony. I know what you’re thinking, “focaccia? it’s just bread!” Well, shush it. This is the best bread. It’s easy, it’s salty, it’s oily… the most perfect bread for crusty crunch and ooey, airy, plush, soft yum.
This isn’t your regular focaccia. Think of going to Olive Garden or some other basic ass Italian chain, and then think of the bread they bring out before your meal. It’s FLUFFY. It fills you up and is only there to soak up EVOO and balsamic.
This, well, not so much. The David S. Pumpkin’s of focaccia, it’s its own thing. Take the best parts of a typical focaccia and say goodbye to the 70% of filler bread. Hello this recipe!
This is perfect addition to a big family meal, a slow weekend, or a cozy soup. It can stand on its own, without oil and balsamic, or whatever dip. It’s still has bubbles and bounce, but it’s got an extra crunch in there, too, that I love.
